We took a late dinner tonight. Ergo, I decided to put together something light-
Spinach Salad:
Saute mushrooms and scallions in a modest splash of olive oil.
Plate up fresh spinach and add sliced hard boiled egg (I had prepped mine the night before).
When the the mushrooms are cooked to your preference, remove from heat. Add a splash of balsamic vinegar. Sea salt and fresh cracked pepper to taste.
Pour the mushrooms on top of the spinach, drizzle the olive oil/balsamic evenly over the greens.

To share: we had sliced ham cold cuts, almond stuffed olives, three Artisan cheeses, crackers, chaullah, hazelnut milk chocolate squares and hummus. Just a few bites of each to satisfy our palates without filling us up too much.
